Reguliere koffie is verre van duurzaam. Er wordt geen rekening gehouden met arbeidsomstandigheden, milieu en gezondheid. Daarom test ik de duurzame koffie van Wakuli. Dit duurzame bedrijf maakt koffie met oog voor boer én koffieliefhebber.
Wat is er mis met supermarkt koffie?
Supermarkt koffie is een stuk voordeliger dan duurzame koffie. Een pak huismerk koffie kost misschien € 2,59 voor 250 gram. Als je flink wat koffie drinkt, is dat wel het meest voordelig. Althans, voordelig voor jou als koper. De koffieboeren komen er wat minder goed vanaf. Volgens de Consumentenbond is de werksituatie voor boeren verre van prettig. Zo worden er in Brazilië nog volop giftige bestrijdingsmiddelen gebruikt. Deze middelen komen ook weer in het grondwater terecht, waardoor ook omwonenden in aanraking komen met giftige stoffen. Waarom gebruiken boeren die bestrijdingsmiddelen? Nou, de fabrikant overtuigd hun van de noodzaak. Als je het eenmaal gebruikt dan is de bodem er afhankelijk van geworden. Als boer kan je dus niet meer terug.
Daarnaast werken de koffieboeren ontzettend hard voor hun koffie, maar krijgen ze er nauwelijks geld voor. Om maar niet te beginnen over kinderarbeid. Deze slechte werkomstandigheden komen voor bij veel koffiemerken. Via Rank A Brand kan je kijken wat koffieproducenten doen qua duurzaamheid en werkomstandigheden. Grote speler Douwe Egberts, met een enorm marktaandeel van 50%, heeft bijvoorbeeld label E. Van alle DE koffie, is slechts een derde duurzaam (bron).
Ook de smaak van de koffie heeft onder deze omstandigheden te lijden. Dol op een sterke, bittere bak koffie? Nou, zo hoort koffie dus niet te smaken. Door het massale proces zit koffie soms vol met schimmels, vocht en gebroken bonen. Dat wil je natuurlijk niet terug proeven. De bonen waarom flink gebrand, waardoor koffie bitter smaakt (en daardoor vinden veel mensen het bijvoorbeeld ook niet lekker).
Duurzame koffie van Wakuli
In 2016 ging Yorick als adviseur voor koffiecoöperaties naar Oost-Afrika. Hier zag hij met zijn eigen ogen in wat voor slechte omstandigheden de boeren leven. Ondanks dat de koffieconsumptie wereldwijd toeneemt, zijn de marktprijzen voor bonen fors gedaald. Hierdoor krijgen de boeren amper geld voor hun koffiebonen en kunnen ze nauwelijks hun levensonderhoud betalen. Het beroep als koffieboer is ook een stuk minder in trek door deze lage lonen, waardoor ook de kwaliteit van koffie slechter wordt.
Daarom maakte Yorick en Lukas een plan om duurzame koffie te verkopen die goed is voor boer, consument én milieu. Met behulp van een crowdfunding is in 2018 de eerste container koffiebonen verscheept . Sinds 2019 is Wakuli (Wakulima betekent boer in het Swahili) volledig in business. Kwaliteitskoffie met een eerlijke prijs voor de boeren en consument. Zo betaalt Wakuli gemiddeld € 4,20 per kilo aan de boer, terwijl de supermarkt gemiddeld € 1,60 neerlegt voor een kilo koffiebonen. Een flink verschil!
Wakuli is erg transparant over het kostenplaatje. Zo krijg je bij je bestelling een diagram met de winstverdeling en meer informatie over de smaak en productie. De koffie komt direct van de boer en 14 dagen na branding heb je de koffie al in huis.
Brandende vragen aan Wakuli
Voordat ik deze samenwerking aan wilde gaan, wilde ik natuurlijk wel het een en ander weten. Zo heb ik een paar vragen gesteld, die jij misschien ook wel hebt.
1. Waar is het percentage op de boeren op gebaseerd?
“We kijken bij het kopen dan de koffie naar een aantal factoren, zoals de kwaliteit van de bonen, de leefomstandigheden van de boeren en ook de externe factoren in een specifiek land/gebied. We hebben een vaste blend (die het hele jaar hetzelfde is) en een wisselende Single Origin (die elke maand anders is). Onze klanten krijgen bij hun nieuwe koffie dan ook een kaartje mee met een precies diagram over hoeveel procent er naar de boeren gegaan is en waar de rest van hun geld naar toe gaat. Ook lees je meer informatie over naar wat voor projecten bijvoorbeeld.”
2. Waarom hebben jullie geen certificering, zoals FairTrade?
“We maken juist geen gebruik van certificeringen (en zijn dus ook niet FairTrade). Een certificering lost helaas voor veel boeren de problematiek niet op. We kijken altijd naar hoe de koffie is geproduceerd. Het idee van Fair Trade is goed op papier en natuurlijk creëert het een standaard. Het is alleen zo dat boeren moeten investeren om de certificering te krijgen. Dat is enorm jammer. Waarom zou je daarin investeren als je er ook van kan eten, je kinderen ervan naar school kan laten gaan of er van kan leven?”
3. Volgens mij is de verpakking van plastic. Wat is jullie visie/doel qua duurzame verpakkingen?
Klopt! Onze verpakkingen zijn (nog) gemaakt van plastic. Maar wel van plastic type 1 (volledig recyclebaar) en het kan dus mee met het PMD afval. Het is geen ideale oplossing, maar het is erg moeilijk een goede composteerbare verpakking te ontwikkelen die onze koffie goed vers houdt en die mee kan met de post. We zijn er hard mee bezig. De cups (voor Nespresso machines) die we binnenkort gaan lanceren, zijn gemaakt van de reststromen van suikerbiet en rietsuiker afval. En dus wel helemaal biologisch afbreekbaar.
Koffie blends van Wakuli
Voorafgaand dit artikel wist ik niet dat de koffiewereld zo unfair was. Ik wilde dus zeker wel duurzame koffie proberen, maar het schijnt anders te smaken dan reguliere koffie: een stuk milder en zachter. Ik drink mijn koffie het liefst zwart en lekker sterk. Het zou dus even wennen zijn. Ik kreeg van Wakuli twee blends opgestuurd:
Blend 1 is de Wakuli Blend. Een winterkoffie met bonen uit het Andres gebergte van Peru die weer geproduceerd worden door afstammelingen van de Quechua stam. De koffiebessen groeien in een mild klimaat met veel regenval, waardoor het langzaam rijpt. De koffie heeft een smaak van donkere chocolade, vijgen en citrus.
Blend 2 is de Single Origin blend. Deze blend wisselt elke maand. Ik kreeg een blend waarbij de bonen uit het Andres gebergte van Peru gemixt worden met bonen uit het Zuiden van Brazilië. Een koffie met tonen van karamel, hazelnoot, donkere chocolade, vijgen en citrus.
Mijn mening over de koffie
De koffie ruikt net zoals ik gewend ben: heerlijk! Ook ruikt het iets dieper, zachter en kruidiger op de een of andere manier. De maling van de koffie lijkt ook wat groffer? Alsof supermarktkoffie juist veel fijner wordt gemalen. Ik werd door Joli van Wakuli al gewaarschuwd dat de koffie misschien anders smaakt dan ik gewend ben. En ze had gelijk!
De koffie smaakt wat zoeter en zachter, maar wel heel vol van smaak. Het is niet zo slap dat je denkt dat je thee hebt gezet, maar het smaakt wel een stuk milder. Ik ben er heel erg enthousiast over! Ik word er nog steeds goed wakker van, maar dan zonder een vertrekt gezicht van bitterheid van de eerste slok. Ook heb ik het gevoel alsof mijn darmen hier wat rustiger op reageren (lekker TMI). Ik ben hier meer fan van de duurzame koffie van Wakuli dan van supermarktkoffie. Een stuk zachter en krachtiger van smaak, beter voor het milieu en arbeiders en fijner voor mijn buik!
Verkrijgbaarheid Wakuli
Bij Wakuli sluit je als het ware een abonnement af. Je kan kiezen uit hele bonen, filtermaling, espressomaling of cupjes. Ook kan je zelf kiezen hoe vaak je de koffie ontvangt en welke blend je wil proberen. Zo hebben ze de Wakuli blend of de New Origin Blend die elke maand weer anders is. Betalen kan eenvoudig via iDeal, Paypal of creditcard en je kan altijd opzeggen. Dus mocht je het eens willen proberen, dan kan dat vrijblijvend.
